EDIT JAPAN

This kitchen knife was introduced from the West in the Meiji era (1868-1912) along with the meat-eating culture. Originally used for cutting meat, it can also be used at home as a larger Santoku. It is characterized by a rippled pattern known as damascus, and the tsuchime (hammered marks), which are made by craftsmen with hammers, make it easier for the food to separate from the blade.

Description

A "craftsman collaboration" that combines the skills of different craftsmen from different regions. This product is a collaboration between Sakai cutlery in Osaka, which boasts 600 years of history, and indigo dyeing in Tokushima.

The base wood is made of hiba (hiba cypress), which is one of the most resistant to decay. It is then dyed with indigo, which has been valued since ancient times for its antibacterial, deodorizing, and insect repelling effects.

After the wood is dyed, it is sprayed with indigo dye solution to create a gradation, resulting in a piece that is both functional and visual.

Please be assured that the indigo dye will not seep through or come off since the indigo dye is coated with a waterproof coating that conforms to the Food Sanitation Law.

  • The waterproof coating conforms to the Food Sanitation Law, so the indigo dye will not bleed through.
  • Please note that the waterproof coating may peel off if subjected to strong impact.
  • After washing with neutral detergent, dry well and let dry naturally.
  • Do not cut hard or frozen food, as it may cause the blade to spill.
  • Do not burn the blade with fire.
  • Do not use a dishwasher.
